榨面系精制灿米制作。经洗米、浸润、磨细、压榨、静渗（亦称微发酵）、搅拌、成稞、煮稞、冷却、上榨、成面、煮面、冷浸、分条于竹笠中成圆盘形、避烈日、背风晒干等二十多道工序制作而成。而纯手工制作的豆腐皮久煮不烂,绵软可口,筋道富有弹性,营养丰富，再配以泡椒酸萝卜和其他佐料，这面吃得是有滋有味。
